This is an Italian winery with a difference. Run by a Greek family who started out in the 1990s by winemaker Evangelos Parascho. Evangelos, a former restaurant owner, was inspired after developing a strong passion and a taste for the wines produced at nearby vineyards such as Movia and Gravner.
The international theme continues. Located in the heart of the Friulian Collio, in north-east Italy, it's just 3 km from the border with Slovenia, and Greek, Italian, Slovenian are spoken at the winery.
Home to some of the greatest naturally made Pinot Grigios on the planet, the estate has been organic since the outset, but moved to completely natural wine in 2003. This meant switching to indigenous yeast only, no filtration, or SO2 added.
In 2018, the family divided the grapes grown in the southern oriented vineyard from the north-east oriented vineyard. Grapes are destemmed and left with their skins in large open-topped vats for eight to ten days, and no refrigeration is used during the process. After a light pressure, wines are racked into old Slavonian oak casks and left on the fine lees for 1 year. The result? Pure exceptional natural wine.
